My daughter, Gillian, was diagnosed with celiac disease in 1992 wen she was six years old. Leaning what foods were and were not safe was an exhausting process. Many additives are wheat-based and found in most common foods. For me, an executive chef, finding a palatable bread that would not fall apart in Gillain's lunch box was my first mission.
