These butterscotch bars are chewy, buttery dessert bars that are super easy to make with a handful of pantry-staple ingredients. They have gooey pockets of butterscotch chips throughout and come together in about 30 minutes!

Butterscotch Bars

Ingredients
1 cup (227g) Heinen’s Unsalted Butter, melted
1 ¾ cup (372g) Heinen’s Light Brown Sugar
1 tsp. vanilla extract
2 Heinen’s Cage Free Large Eggs, room temperature
1 ½ cups (195g) all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 cup (200g) butterscotch chips
Directions
- Preheat the oven to 350°F and line a 9×13-inch pan with parchment paper. Set aside.
- Whisk the melted butter, brown sugar, and vanilla together in a large bowl. Then whisk in the eggs until combined.
- Add the flour, baking powder, and salt. Fold the dry ingredients into the wet with a rubber spatula until just a few dry streaks remain, then fold in the butterscotch chips.
- Pour the batter into the prepared pan and spread it into an even layer. Bake for 20-25 minutes until the edges are golden brown.
- Let the bars cool in the pan for about 30 minutes, then slice and top with additional butterscotch chips.
