Directions
- Preheat the oven to 350°F. In a mixing bowl whisk together the salsa and some of the crème fraiche. Lightly brush or spray the tortillas with a little bit of oil and heat in the oven briefly until they’re pliable.
 - Spoon some of the salsa into the bottom of a baking dish. Dip the tortillas in the salsa and place some of the chicken and a little bit of cheese on each tortilla. Roll the filling up in the tortillas and place the enchiladas seam-side-down in the dish. Top with some of the salsa and cheese before baking.
 - While the enchiladas are cooking, heat the rice according to the directions on the package. Serve the enchiladas with the rice. Garnish with cilantro and chopped onion, if desired.
